Vegetarian Passover Recipes
While Passover cooking can be a culinary challenge for anyone, for vegetarians it is even harder. So many of the staples that vegetarians rely on are forbidden during Passover - no flour in any form, no pasta, quiche, pastry or bread. However, there are many Passover vegetarian recipes that are not only suitable they but are also delicious and will tempt the staunchest meat eaters. Many vegetarian recipes for Passover include eggs. On reflection most of them include eggs, although I have tried to find some egg-free recipes. In some recipes such as frittata the eggs are the main ingredient, whilst in others such as
zucchini nut loaf
they simply serve as a binding agent.

Several of these recipes feature one or more of my favorite vegetables - mushrooms, spinach, tomato and zucchini. Mushrooms are ideally suited to vegetarian Passover recipes because of their meaty taste. You will find many mushroom recipes from
stuffed mushrooms
to
mushroom quiche
and creamy mushroom sauce. Other vegetables also feature in recipes, such as eggplants in
eggplant parmesan
and
vegetable shepherd's pie
and cauliflower in
kugel
and salads.
