Tu BShvat Recipes

Tu Bshvat (tu b shevat/ tu bishvat) which falls in the winter marks the New Year for trees, and consequently tu bshvat recipes are laden with fruit.

Some people have the custom of celebrating tu bshvat with a special ceremonial meal (seder) involving different colored wines and many fruits of different types. Others try to eat 15 fruits, including new fruits. In Israel a tradition has developed to eat all kinds of dried fruits. We are no longer limited to apricots and figs; in the run up to tu bshvat the shops and markets are full of a colorful assortment of dried fruits ranging from strawberries and kiwi to pineapple and mango. Many of these fruits are extremely sweet and a poor substitute for their non-dried equivalents, but some are lovely – one of my personal favorites is cubes of dried coconut.

Fruity clafoutis
Fruit works well in any course of a meal – starter, main course, and of course dessert. Fruit is a common addition to many dishes – dried fruit is well suited to stews and is often incorporated in Sephardi recipes such as cous cous or tagines. Fresh fruit is often used in green salads and chicken salads providing lovely contrasts in texture and color.

Fruity desserts can include cookies, cakes, muffins pies stuffed fruits and more.
