Sukkot Recipes
"Find sukkot recipes - ranging from easy to traditional - chag sameach!" Finding sukkot recipes is more of a challenge than for other Jewish holidays. In contrast to
Passover
with its strict rules of what can and cannot be eaten, and
Shavuot
with its traditional dairy foods,
Sukkot has no hard and fast rules about food consumption. One of the synonyms of sukkot is Chag Ha'asif (or the festival of the harvest), and sukkot falls at the end of the harvest. Consequently there is a tradition to eat lots of fruit and vegetables during the 8 days of sukkot. To symbolize the richness of the harvest, stuffed foods are served and these incorporate both meats in main dishes, and fruit as desserts. In addition to the fact that there are no clear guidelines for what to eat and avoid on sukkot, the timing of the holiday can leave us feeling fed up of cooking. For Rosh Hashanah we may want to make something extra special. However, after a Shabbat, and pre/post fast, and maybe another Shabbat by the time sukkot comes around who can still be enthusiastic about cooking? I always try to make different recipes for sukkot, and often try to find lighter dishes to balance the heavy meals of Rosh Hashanah.
To that end stuffed vegetables are a lovely option. Traditionally, one of the foods commonly associated with Sukkot is holishkes or stuffed cabbage. However, there are so many lovely colorful vegetables that can be stuffed that it seems a shame to limit ourselves to cabbage leaves. Here you will find recipes for stuffed
