Roast chicken is a classic dish, served in households all over the world of Friday night and holidays. But traditional dishes can become stale over time. During Passover there are so many holiday meals – 1 or 2 sedarim, lunches, Shabbat chol hamoed, it just doesn't seem to end, and there is only so much roast chicken you can eat. Chicken wings are a great appetizer but so many recipes contain soy sauce (chametz), and often mustard (kitniot). Try these Passover chicken wings - tangy apricot wings or honey wings are good enough to enjoy all year round.

Roast chicken is so easy, and you can vary it in many ways by adding different ingredients. Try flavoring with pesto under the skin, putting lemon and garlic in the cavity or stuffing it.

Chicken thighs do not dry out like the breast and consequently are suited to slow cooking. Thighs can be cooked on or off the bone. They are also extremely versatile and can be cooked in many different ways and paired with different flavors such as apricot and apples, mushrooms or sundried tomatoes.

Minced chicken is a lower fat alternative to minced meat, and can be used very successfully to make "meat" balls and burgers . Try out Passover chicken and spinach burgers or chicken meatloaf.


Chicken breasts can be used in so many different ways – they can be crusted and baked with pesto or sundried tomato pesto roast(taking care not to overcook them), they can be pan fried, they can be cooked and shredded into salads and chicken pies. When sliced thinly they can be cooked as shnitzels, or stuffed and baked. The choices are endless!
