Low carbohydrate recipes

A collection of kosher low carbohydrate recipes, suited to kosher cooking and the Jewish holidays.

Low carbohydrate diets are becoming more and more popular. There are now so many different types of low carb diets - Atkins, South Beach, GI, Dr Poon and many more. However, traditional Jewish holiday foods do not fit into these diets. So many traditional Jewish foods are high in carbohydrates – kugels, knishes, kneidlach and cheesecakes are all packed with carbohydrates.

Here is a selection of low carbohydrate recipes that I have developed and cooked over the last few years. Some are traditional, most are not but there are variations on traditional themes. For example, whilst you can't make a potato kugel that is low in carbohydrates, you can make broccoli or cauliflower kugel instead.

Each specific low carbohydrate diet has it's own rules and guidelines regarding which, if any carbohydrates can be eaten and in what quantities. The recipes listed here have little or no carbohydrates. In some cases there is a small amount of flour or matza meal. This can usually be replaced by oats, wheat germ and/or oat bran. In some cases, there are low GI carbohydrates (oats, sweet potatoes etc). For more information regarding a low carbohydrate diet please contact a nutritionist.
