Passover food is an integral part of the holiday, and searching for Passover recipes comes second only to searching for chametz (leaven).
The run up to Passover is one of the busiest times in the Jewish household; many hours are spent searching for chametz, and spring cleaning. Grain products that are already fermented (such as bread and many types of cake) and substances that cause fermentation (eg yeast) are forbidden. Consequently, cooking and in particular baking is tricky during Passover.
Many dishes can be made without any alteration in particular meat and fish dishes, but dairy foods, such as

pancakes
as well as baked goods have to be altered. In addition, many kugels and side dishes and even salads or salad dressings need some adjustment for Passover.
