Passover Recipes

Passover food is an integral part of the holiday, and searching for Passover recipes comes second only to searching for chametz (leaven).

The run up to Passover is one of the busiest times in the Jewish household; many hours are spent searching for chametz, and spring cleaning. Grain products that are already fermented (such as bread and many types of cake) and substances that cause fermentation (eg yeast) are forbidden. Consequently, cooking and in particular baking is tricky during Passover.

Many dishes can be made without any alteration in particular meat and fish dishes, but dairy foods, such as quiche pizza and pancakes as well as baked goods have to be altered. In addition, many kugels and side dishes and even salads or salad dressings need some adjustment for Passover.

In recent years cakes made without flour have become popular and it is now possible to find suitable recipes which are so tasty you will want to make them all year round. There is a selection of cakes and Passover desserts which are made using nuts, matza meal or potato flour and produce excellent results. I am always surprised by quite how many cakes and cookies get eaten during the 7 (or 8) days of Passover, and you will find a selection of recipes for cakes, brownies and other baked goods here.

Passover rolls
Whilst bread and all its derivatives are strictly forbidden, there are many recipes for Passover rolls or Passover bagels. These are more similar to choux pastry than to real bread, with the addition of several eggs, but are very tasty.

If you are looking for other suggestions for your passover menu planning, you can find a number of vegetarian Passover recipes here including spinach pancakes, nut loaf and lasagna.
